Sandwich

One of my resolutions for 2019 is to pack my lunch for school every day. Buying lunch is very environmentally unfriendly, because every day I’m consuming plastic utensils, napkins, and styrofoam trays. By bringing my own food, I’m reducing the amount of waste I produce, and thus, being more environmentally conscious.

I started off the year by packing this delicious sandwich with a variety of ingredients. It is so delicious and quite healthy too! Of course, you can customize your sandwich however you want, but this variation is perfect to me.

I start by toasting two slices of whole wheat bread. Then spread a layer of almond butter on one side to prevent sogginess.

Then I add a layer of spinach.

On the other side, I usually just start layering with my meat, as they’re already provide a fat shield. For my meat, I use a slice each of prosciutto and turkey breast.

Next, I spread some avocado on both sides. Depending on your preferences, use anywhere from 1/3 to 1/2 of an avocado. Also, grind some black pepper and chop up a bit of green onion and cilantro to go on top. It adds so much flavor!

Then it’s finally time for the juicy part! Add a few slices of tomato.

Top with two slices of smoked salmon for extra deliciousness and all sorts of fresh greens.

Put it all together, and you’re done! So easy but sooo yummy.

It was also a lot of fun to think of some sides I could enjoy with the sandwich. Changing it up each day led to variety and a balanced meal. Some of the sides I used were potato wedges, grapes, roasted Brussels sprouts, clementines, squash, and sweet potato!

Sandwich

Ingredients:

  • 2 slices whole wheat bread
  • 1 tbsp almond butter
  • handful of spinach (~10)
  • 1 slice prosciutto
  • 1 slice turkey
  • 1/2 avocado
  • 1 pinch of ground pepper
  • 1/2 stalk of green onion
  • 3 springs of cilantro
  • 1/2 small tomato
  • handful mixed greens (~10)
  • 2 slices smoked salmon

Supplies:

  • 1 toaster
  • 1 butter knife
  • 1 fork
  • 1 spoon
  • 1 knife
  • 1 serrated knife

Steps:

  1. Toast the slices of bread.
  2. Use butter knife to spread almond butter on Slice 1.
  3. Cover Slice 1 with spinach leaves.
  4. Place prosciutto on Slice 2.
  5. Place turkey on Slice 2.
  6. Mash avocado with fork. Use spoon to transfer evenly on both slices.
  7. Grind black pepper over both slices.
  8. Chop green onion and cilantro. Sprinkle over both slices.
  9. Use serrated knife to slice tomato. Spread slices on Slice 2.
  10. Cover Slice 2 with mixed greens.
  11. Place smoked salmon on Slice 1.
  12. Flip Slice 1 onto Slice 2.
